Jelly Melba




A bastardisation of two perfectly good recipes.




Steps 1 and 2 from this Raspberry & mint jelly




And using this Champagne jelly  (substituting sliced peaches)
 for the mint part of the first recipe.






Some people just can't leave well enough alone.

I don't know why I had never heard of Champagne jelly before, but it sounds like just the most acceptable way to get sloshed at a children's party - jelly for the children and some for the adults as well! Will give that recipe a go this coming summer.

Well, from my view, of this side of the pond, it looks like a normal Southern dessert!

TB - it is delicious, and at the mo trying to work out how to give it an ice cream core. Then it will be perfect.
